[食譜] 芝麻餅乾

最近在家時間多,不妨來做個餅乾吃吃

配方:

無鹽奶油:240g
糖粉:180g
全蛋:80g
低筋麵粉:400g
發粉:4g
白芝麻:14g
黑芝麻:14g
海鹽:3g
製作麵糰:
1. 無鹽奶油放置室溫軟化、糖粉過篩後先倒入攪拌盆內、低筋麵粉混合發粉後過篩

2. 無鹽奶油與糖粉、海鹽混合拌勻,刮缸

3. 倒入全蛋後拌勻,刮缸

4. 倒入芝麻、低筋麵粉,低速拌勻,刮缸

5. 倒出,手沾高粉整形,以保鮮膜包裹,冷藏1小時以上

桿製:
1. 取出後切適當大小
2. 先以擀麵棍逐步壓軟

3. 桿至約0.5公分厚,以餅乾模具切模後,冷藏30分鐘以上

烤焙
1. 預熱200度 (旋風烤箱170度)
2. 160度烤20~25分鐘 (旋風烤箱140度烤15~18分鐘)

1. 放入保鮮盒內冷藏或冷凍可保存月餘

*此配方可作約70片,可將配方直接減半較適合
**此配方因奶油比例較多,麵團容易軟化出油,
因此操作要快
